These delicious little cookies make a great gift and made in a few minutes in the
processor.
Makes about 20
220g butter, room temperature, chopped
100g caster sugar
100g soft brown sugar
1 egg
160g self-raising flour
150g crunchy peanut butter
50g cashew nuts or walnuts, chopped to decorate
Set the oven 180c gas mark 4. Lline a baking sheet with non-stick paper
Mix all the ingredients except the nuts to decorate in the processor, when well
mixed, divide the mixture in half and roll each half in cling film and leave in the fridge
to firm up or just take about 30g for each cookie and bake as many as you need. The
rest of the dough will hold in the fridge for 2 weeks or freeze for 3 months. Sprinke a little
of the chopped nuts on each biscuit. Bake for about 12/14 minutes. Allow to cool on the
baking sheet.
