Pear and almond torte

This recipe is especially useful when you’d like a tart but don’t have time for the pastry, so it is more cake than pastry, much quicker and delicious.

Serves 6/8

180g butter, room temperature

180g caster sugar

140g ground almonds

40g self raising flour

1 teaspoon vanilla extract

2 eggs, beaten

2 pears, thinly sliced

Set oven 180c gas 4   Butter a 23cm tart tin

Mix the butter, sugar, ground almonds, flour, vanilla extract and eggs well together. Pour the mixture into the tin, arrange the sliced pear on top. Sprinkle with a little extra sugar. Bake for 40/45 minutes.
