Blueberry and oat muffins

My good friend Catherine Leyden and the best ever home baker cooked these lovely muffins recently on Ireland AM, in case you missed it, here is the recipe.

200g plain flour

125g oats

1 teaspoon bread soda

1 and half teaspoons baking powder

1 tablespoon cornflour

¼ teaspoon salt

125g soft brown sugar

1 teaspoon vanilla extract

100ml sunflower oil

200ml buttermilk

2 eggs, beaten.       Zest of large lemon

125g blueberries

Set oven 190g gas 5    line a muffin tin with baking papers.

In a medium bowl mix all the dry ingredients together, then add the vanilla, oil, buttermilk, eggs and lemon rind. Mix a little flour with the blueberries, this will prevent them from sinking, then stir them gently through the mixture. Spoon into the muffin papers and bake for about 20/25 minutes.lovely warm from the oven.
