Grab & Go Bran Muffins

If you need a breakfast snack on the go, these are just about perfect & portable

Makes 12 muffins

80g wheat bran

3 tablespoons Greek style yogurt

100g soft brown sugar

100ml sunflower oil

½ teaspoon vanilla extract

100g self-raising flour

150g madjool dates, chopped or any dried fruit

 

Line a 12 muffin tray with papers, set oven 180c gas mark 4

In a large bowl mix all the ingredients together, then spoon the mixture into the muffin tray and bake for 20/25 minutes. Cool in the tray then store in air tight container or freeze for up 3 months.
