This is such a useful salad anytime, a side dish, a main course with some good bread, a quick lunch or a home alone dinner,. a few ripe avocados, a pack of bacon and you’re away.

Serves 2

2 ripe avocados

juice ½ lemon

8 cherry tomatoes, chopped

2 scallions, washed and chopped

1 red chilli, chopped

2 tablespoons olive oil

4 slices of smoked dry-cured bacon, chopped

1 tablespoon red wine vinegar

salt and black pepper

Cut the avocados in half, remove the stones and peel, cut into chunky pieces, place in a bowl with the lemon juice, add the tomatoes, scallions and chilli. Mix gently. Heat the olive oil in a non-stick pan. Add the bacon and cook until crisp and golden, deglaze the pan with the vinegar. Spoon the salad on to the serving plates, top with the crispy bacon and juices from the pan, season lightly and serve immediately.
