This is a chocolate cake much enjoyed at the recent 4th July celebrations by the American community in Galway, they are always very generous to share their recipes. Try it for your next celebration, it’s good.
200g plain flour
300g caster sugar
75g cocoa
2 teaspoons baking powder
2 level teaspoons baking soda
250ml Greek style yogurt
100ml sunflower oil
2 eggs, beaten
1 teaspoon vanilla extract
240ml hot strong coffee
Topping
170g dark chocolate
150g butter
1 tablespoon strong coffee
1 teaspoon vanilla extract
Set oven 180c gas 4 Line a 23cm cake tin with nonstick paper
In a large bowl whisk the flour, sugar, cocoa, baking soda and baking powder together.
Then add in the yogurt, oil, eggs, vanilla and coffee, mix well together and pour into the tin.
Bake for 40/45 minutes or until a skewer inserted into the centre comes out clean. Cool in the tin.
To make the topping, Melt the chocolate, butter, coffee and vanilla in the microwave on a low heat.
Stir gently, when the mixture has cooled and has the consistency of thick cream, spoon over the cake.
