ANNMARIE’S BOILED CAKE

This cake is an old family recipe that never goes out of fashion. Tea and boiled cake to soothe

the weary soul!  Really simple to make just boil up the lot.

Line a 20cm square cake tin with baking paper

750g dried fruit

80g glace cherries

80g mixed peel or chopped almonds

250g butter

250g sugar

380ml water

360g plain flour

½ teaspoon of cinnamon

3 eggs, beaten

½ teaspoon bread soda mixed with 1 tablespoon vinegar

In a large saucepan, mix the dried fruit, cherries, mixed peel or almonds, butter, sugar and water together.

Place on a low heat and simmer gently until the butter has melted. Remove from the heat and allow to cool.

Set the oven 180c gas 4.

Stir in the flour, eggs and finally the bread soda and vinegar, spoon into the lined tin and bake for 1 hour and 15

minutes, you may need a little more or a little less, test with a cocktail stick after an hour, also cover with foil.

if you think it’s browning too quickly. You could also wrap tin foil around the outside of the tin before baking.

so, you get a nice even browning.
