With Grilled Sourdough & Green Chilli Dressing

Quick and easy to prepare and perfect for a sunny day
1 avocado, peeled and chopped
8-10 cherry tomatoes, chopped
1 small red onion, thinly sliced
A few sprigs basil , chopped
green chilli dressing
2/3 cloves garlic, chopped
1 green chillli, chopped, no need to remove the seeds
juice of a lime
sea salt
3/4 tablespoons olive oil
pinch of sugar
a few slices sourdough
150g buffalo mozzarella, tear into small pieces
Method
Mix the avocado, tomatoes, onion and basil together. In another small bowl mix all the dressing together, taste for seasoning, pour the dressing over the salad but reserve about a tablespoon, mix the dressing through the salad, tip into a serving bowl, top with the mozzarella, set aside, grill the bread with some extra olive oil, top with remaining dressing and serve warm with the salad.
