Looks good, tastes great, not expensive and easy to make.
Serves 4
2 tablespoons olive oil
2 red onions, finely chopped
2/3 cloves garlic, chopped
2 teaspoons curry paste
450g minced lamb
sea salt and black pepper
Cucumber raita
1 cucumber, grated
4 tablespoons Greek style yogurt
1 tablespoon chopped mint
1 teaspoon honey
Tomato salsa
10 cherry tomatoes, chopped
1 red chilli, chopped
juice of 1 lime
1 tablespoon basil, chopped
2 tablespoon olive oil
Start with the onions, heat the oil and sauté the onions & garlic until just golden, add the curry paste and mix well, set aside to cool completely. Tip the minced lamb into a large bowl, season well and mix in the onion mixture, shape the koftas onto 4 skewers and leave in the fridge until ready to cook. Place the cucumber in a sieve and season with some salt, leave the cucumber to drain for about 10/15 minutes. Mix all tomato salsa ingredients together and season well, set aside. Drain the cucumber no need to rinse, add the yogurt, mint and honey. Grill the koftas until fully cooked 75c.
To serve, spoon the raita onto the serving plate, top with the koftas and spoon over the salsa. A bowl of basmati rice to complete the meal.
