Chewy fruit and nut bars

Very good for a quick  energy boost, so easy to make and will hold really well

in an airtight container.

180g nuts, toasted and chopped

300g dried fruit

80g dark chocolate drops

70g plain flour

70g soft brown sugar

½ teaspoon baking soda and pinch of salt

2 eggs

1 teaspoon vanilla extract

20cm square tin lined with non-stick paper Set oven 160 gas 3

In a large bowl mix the nuts, fruit, chocolate, flour, sugar, baking soda and salt together. In another bowl whisk

the eggs and vanilla together until thick and creamy and fold into the dry ingredients. Spoon the mixture into

the lined tin and bake for 25/30 minutes. Cool in the tin and cut into 12 bars.
