This South American classic dressing is so good with steak but also great with roast chicken, pan fried fish or chargrilled vegetables and made in minutes.
serves 4/6
2/3 shallots, finely chopped
small bunch parsley, finely chopped
2 garlic cloves, finely chopped
pinch chilli flakes
3 tablespoons olive oil
juice of ½ lemon
dash of red wine vinegar
sea salt and black pepper
Combine all ingredients together, mix well and taste for seasoning, set aside for 20/30 minutes for the flavours to blend.
