On the table in under 30 minutes and very budget friendly
Serves 4
1 tablespoon sunflower oil
500g pork mince
1 red onion, chopped
1 red pepper, chopped
3 cloves garlic, chopped
thumb size piece ginger, chopped
½ teaspoon chilli flakes
1 tablespoon sugar
1 tablespoon rice vinegar
1 tablespoon oyster sauce
1 tablespoon soy
To serve, 3 scallions, chopped 2 red chillies, chopped,
2/3 little gem/ cos lettuce
Heat a large frying pan with the oil, sauté the pork until
nicely browned, add in the onion, pepper, garlic, ginger
and chilli flakes, continue cooking for 3/4 minutes, then
add in the sugar, stir well and allow the sugar to caramelise,
then add the vinegar, oyster sauce and soy, taste for seasoning.
Serve in the little gem lettuce leaves and top with chopped
scallions and chillies.
