Chocolate and ginger perfect combination of flavours,
made in minutes, keep the dough in the fridge and bake when you want.
makes 21 x 30g cookies.
150g butter, room temperature
150g brown sugar
2 teaspoons ground ginger
1 teaspoon vanilla extract
180g self-raising flour
40g crystallised ginger, chopped
80g dark chocolate, chopped
Set oven 180c gas mark 4 Line a baking sheet with nonstick paper
Beat the butter and sugar together till light and creamy, add in the ground ginger,vanilla and flour, mix well, then stir in the crystallised ginger and chocolate.Take 30g of the mixture for each cookie, place on the baking sheet, flatten slightly with a fork and bake for 10/12 minutes, cool on the tray.
