This lovely moist cake is also excellent as a dessert served with thick cream,
200g dates, chopped
1 teaspoon bicarbonate of soda
200g butter, room temperature
1 tablespoon honey
150g brown sugar
rind of 1 orange
100g ground almonds
150g self-raising flour
2 eggs, beaten
Set oven 180c gas 4 Line a baking tin 23cm with non stick paper
Place the chopped dates in a bowl with 100ml of boiling water and the bicarbonate of soda.
Set aside to cool. Beat the butter, honey, sugar and orange rind together until light and creamy,
fold in the ground almonds and flour, now mix in the dates, plus the liquid and beaten eggs.
When well mixed, spoon into the prepared tin and bake for 35-40 minutes, cool in the tin.
For dessert serve with poached fruit or oranges in caramel.
