makes 6, serves 2/3

125g self raising flour
1 tablespoon sugar
1 egg
4 tablespoon natural yogurt
2 tablespoons butter, melted

Tip the flour and sugar into a large bowl, mix together, then mix the eggyogurt and half the butter together, stir into the flour mixture, gently don’t over mix, it will be thick and a bit lumpy, that’s what you want, too smooth and the pancakes will be heavy, you want light and fluffy!  Heat a large pan, just a low heat, add a lick of butter to the pan, drop 6 tablespoons of the mixture on to the pan, allow each one to brown gently (low and slow) turn over to finish cooking, serve with crispy bacon and maple syrup or a little more butter and a drizzle of honey.
