This is a great combination, you can make the dressing ahead and allow the flavours to develop.
Serves 4
4 fillets of hake seasoned with salt, black pepper, a little sumac and olive oil
dressing
4 tablespoons of Greek style yogurt
1 lime, rind and 1 tablespoon juice
1 tablespoon grated ginger
2/3 scallions, finely chopped
1 tablespoon coriander, chopped
1 tablespoon olive oil
Start with the dressing, mix all the ingredients together and season to taste, set aside.
Heat a large non stick pan, add a little olive oil and cook the hake 3/4 minutes on each side, add a knob of
butter for the last 2 minutes,just to add extra flavour. Serve with a spoonful of the dressing, very good
served with a bowl of new potatoes, saute the potatoes with a little garlic and olive oil, add in some green
beans for the last few minutes until just cooked and season well.
