Fillets of plaice with miso dressing

Great anytime, but in the run up to the big day when you might want a lighter but also a delicious meal and on the table in minutes. In Kinvara, we have found just the best fish supplier, Martina in Burren seafood, well worth a trip. The miso dressing is made in minutes, good with any fish or chicken dish and a great dressing for carrot or spinach salad. It keeps well in the fridge for a couple of days.

serves 4

4 fillets of plaice approx. 150g per serving

sea salt, black pepper and a drizzle of olive oil

4 wedges of lemon

knob of butter

Miso dressing

2 tablespoons light miso paste

juice of half an orange

1 tablespoon soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon honey

pinch of dried chillies

handful chopped coriander

Start with the dressing, mix all the ingredients well together then taste for seasoning, you just want a nice balance of sweet, sour and salty, add more soy, honey or vinegar if you think it needs it, set aside. Season the fish with salt, pepper and a drizzle of oil. Heat a large frying pan, add a little more oil to the pan, add the fish to the pan skin side up, cook for a few minutes, add the lemon wedges to the pan, when the  edges of the fillets begin to brown, add the knob of butter, tilt the pan to allow the butter to coat the base of the pan, turn the fish and finish cooking. Spoon a little of the dressing over each fillet and a squeeze of lemon. Serve the fish with the cooked lemon wedges and the remainder of the dressing on the side.
