Everytime I make these delicious little cakes, the recipe is asked for and then they are surprised it’s so simple! Perfect for a cake sale.
Makes 12
185g butter, melted
6 egg whites
225g icing sugar
75g plain flour
125g ground almonds
zest of 1 lemon
60g blueberries
You will need 12 friand moulds, which are slightly oval shaped, or just use muffin cases.
Set oven to gas 4 / 180c
Brush each mould with a little of the melted butter. Whisk the egg whites to just soft peaks, sift the icing sugar and whisk into the egg whites. Fold in the flour, ground almonds, lemon zest and blueberries, followed by the remaining melted butter. Divide the mixture between the moulds, bake for 25-30 minutes until nicely browned, Serve warm
