Grilled lamb burgers with crispy bacon and blue cheese dressing

Delicious lamb burger, well worth making a batch, cling wrap each one and freeze

then you can take out just what you need, the topping is also delicious but if you

wanted to drop the blue cheese, it is still good with just crispy bacon and sour cream.

Serves 4

Lamb burgers

2 tablespoons olive oil

2 red onions, finely chopped

2/3 cloves garlic, chopped

½ teaspoon chilli flakes

sea salt and black pepper

530g minced lamb

Dressing

4 thin slices streaky bacon, grilled & chopped

50g blue cheese, broken into pieces

4 tablespoons soured cream

Start with the burgers, Heat the oil and sauté the onions and garlic together until just golden

add in the chilli flakes and season well. Set aside to chill completely.

Place the minced lamb in a large bowl, add the onion mixture and combine well together.

Divide into 4 burgers. Keep in the fridge until ready to cook.

Mix all the dressing ingredients together and taste for seasoning. Grill the lamb burgers to 75c.

Very good served with stir fried cabbage/ kale and just a touch of fresh chopped chilli.

Top each burger with a spoonful of dressing.
