Yes, a bit of time involved here but for flavour, economy and perfect comfort food, it’s the best.
Serves 6
900g minced pork and beef (the two together give the best flavour)
1 tablespoon olive oil
2 onions, finely chopped
2/3 cloves garlic, chopped, 1 tablespoon basil chopped
pinch of chilli flakes, 1 tablespoon Worcestershire sauce
1 tablespoon grated parmesan, generous sea salt and black pepper
Place the meat in a large bowl and leave in the fridge while you cook the onion,
Heat the oil in a large pan and sauté the onion and garlic until just golden, stir in the chilli flakes, Worcestershire sauce, parmesan and season well, set aside to cool.
Set the oven 180c Gas 4 Butter a loaf tin or baking dish
Mix the meat and onion mixture together and tip into the baking dish, cook for about 45/55 minutes, check the temperature with probe 75c is fully cooked.
Serve with mashed potatoes or sweet potatoes, I like the two mixed with butter and a dash of cream….. delicious and of course a bowl of tomato sauce.
