Lemon bars

This recipe passed on to me by my American food friends in Kinvara, always ready to share the good things.

BISCUIT BASE

250g butter, room temperature

100g caster sugar

250g plain flour

LEMON TOPPING

4 eggs

350g caster sugar

Zest and juice of 4 lemons

120g plain flour

1 tablespoon icing sugar

Set the oven 180c gas 4   Line a baking tin 30cm x 23cm x 3cm.

Cream the butter and sugar together, add in the flour, mix well, then with floured hands, press the dough into the base of the lined tin. Bake in the hot oven 25/30 minutes until golden brown. Cool in the tin. Mix the topping, whisk the eggs, caster sugar together, add in the zest, lemon juice and flour mix well, pour the mixture over the cooked and cooled biscuit base, return to the oven and bake for a further 35/40 minutes until well set. cool in the tin, sprinkle with the icing sugar and cut into bars.
