LEPRECHAUN COOKIES

Delicious easy baking, you can make ahead and freeze cooked or uncooked

 

60g cocoa

100g caster sugar

100g soft brown sugar

180g self raising flour

2 eggs, beaten

60ml sunflower oil

80g dark chocolate chips

50g icing sugar

To make, mix all the ingredients together, except the icing sugar, in a large bowl, when really well mixed, chill for an hour in the fridge. Tip the icing sugar into a small bowl and set aside.

Set oven 190c gas 5,  Line a baking sheet with non stick paper

Shape the mixture into walnut- size pieces, about 35/40gr. Coat each one in the icing sugar, place on the baking tray and bake for 10 minutes, cool on the tray.
