Lime posset

A very old English dessert, so delicious and only 3 ingredients

500ml cream

150g caster sugar

rind of 2 limes

100ml lime juice

Heat the cream, sugar and lime rind together, bring to the boil, then simmer for 2/3 minutes

until the sugar is dissolved, cool the mixture. whisk in the lime juice. Divide between 4/5 glasses

or pottery dishes (approx. 150ml) each. Leave to set overnight in the fridge but it will set in a

few hours. Serve with a shortbread biscuit.
