MANGO MUFFINS

So easy and quick to make.

makes 12/14

2 eggs, beaten

100g butter, melted

80g caster sugar

150g self-raising flour

1 teaspoon baking powder

1 ripe mango, finely chopped

Set oven 180c gas mark 4, line the muffin tin with cake papers,

Mix all the ingredients well together and spoon into the muffin tin.

Bake for 15/20, cool in the tin. These will freeze very well, 3/6 months.
