Soft, crumbly and crunchy, check the peanut butter is just peanuts and salt.
Makes 16
50g soft brown sugar
100g butter
1 tablespoon date syrup
2 tablespoon peanut butter
80g wholemeal flour
100g oats
1 teaspoon baking powder
Set oven 180c gas 4 Line a large baking tray with nonstick baking paper.
Heat the brown sugar, butter, date syrup and peanut butter together until
the butter is melted, remove from the heat. Mix the flour, oats and baking
powder together. Stir in the butter mixture, combine well together, set aside
to cool, then shape into 16 cookies approx. 30g each, Bake on the lined tray
10/12 minutes, cook in two batches as the cookies will spread, cool on the
baking tray.
