OAT FLAKE CRUNCHIES

Makes 12 small squares

Base
200g butter
75g soft brown sugar
200g plain flour
100g oat flakes

Filling
50g butter
75g golden caster sugar
200g mixed dried fruit
1 egg, beaten
1 teaspoon vanilla extract

Set oven 180oC Gas 4, line  a baking tin 20cm x 30cm approx. with non-stick paper

Start with the base, melt the butter and brown sugar on a low heat, remove from the heat and stir in the flour and oat flakes. Take half the mixture and press well into the baking tin. Now make the filling, melt the butter add the caster sugar, cook slightly, cool, stir in the fruit, beaten egg, and vanilla, mix well. Spoon the filling over the mixture in the tin, an even layer, then cover with the remaining base, press down lightly, bake in the preheated oven for 25-30 minutes, until golden brown. Cool in the tin and cut into squares. They freeze well, ready anytime you need a treat.
