Very useful as a dessert or teatime treat, very moist and best of all gluten free
serves 10
2 medium oranges
6 eggs
250g caster sugar
1 teaspoon baking powder (gluten free if required)
250g ground almonds
Start with the oranges, place in a medium saucepan, cover with cold water bring the water to the boil, reduce the heat and simmer for about 2 hours or until the oranges are absolutely soft, remove from the heat, drain, cut up the oranges, remove the seeds, whizz in the processor and leave to cool.
Set the oven 180c gas 4 line a cake tin 23cm with nonstick paper.
whisk the eggs and sugar together, Stir in the baking powder, ground almonds and orange puree, mix well, pour into the prepared tin and bake for about an hour, check with a skewer inserted into the centre of the cake comes out clean. Cool in the tin. Very good with oranges and caramel.
