This is our favourite cake at the moment, the plums are plentiful and delicious. Warm from the oven it’s the absolutely best, but I’d wrap it up and take it with me anywhere for a cake break!
8/10 portions
200g butter, room temperature
200g caster sugar
200g self raising flour
80g ground almonds
2 eggs, beaten
1 tablespoon Greek-style yogurt
5/6 plums, stone removed, quartered
1 tablespoon sugar
Line a 23cm cake tin with non-stick paper Set the oven to gas mark 4, 180c
In the mixer beat the butter and sugar together until light and fluffy, then add the flour, almonds, eggs and yogurt, mix well. Spoon into the prepared tin, place the plums on top, sprinkle with the tablespoon of sugar and bake for 40/45 minutes or until a skewer comes out clean from the centre of the cake. Cool in the tin.
