POACHED CHICKEN WITH WINTER VEGETABLES & LEMON DRESSING

All cooked in one pot which makes the most delicious flavours and the best bowl of comfort food.

Serves 4

1.5kg free range chicken, skin removed

Sea salt, black pepper & smoked paprika

2/3 tablespoons olive oil

3/4 cloves garlic, chopped, generous piece ginger, chopped

vegetable selection, carrots, leeks, potatoes, butternut squash, kale, whatever is available

1 lemon, cut into wedges

500ml water

           Dressing, large handful parsley, chopped, 2 cloves garlic, chopped, 3 tablespoons olive oil

juice of ½ lemon & seasoning

Set oven 350c gas 4

Season the chicken well with salt, pepper and smoked paprika, Heat the oil in a large heavy

casserole, sauté the garlic, ginger and vegetables together, but hold back the potatoes and kale.

to add in for the last 15 minutes of cooking time. place the chicken on the vegetables, add the

lemon wedges, pour in the water plus more seasoning. cover and cook in the hot oven for about 1

half hours, add the potatoes and kale for the last 15 minutes, top up the liquid if necessary.

Check the chicken temperature 75c .with a digital probe. Mix all the dressing ingredients together

and season well.  Serve in deep bowls with a spoonful of dressing.
