A great recipe for the week end, really simple to make, enjoy in the garden or wrap it up and take on your walk and eat under the trees with a flask at your side.
Serves 2/3
Ingredients
320G approx. packet of frozen butter puff pastry
2/3 medium potatoes, peeled and thinly sliced
2 cloves garlic, thinly sliced
Salt and black pepper
Drizzle of olive oil
100g of your favourite soft cheese, I like Gubbeen, Taleggio is good or Camembert, sliced
A few sprigs of thyme
Set oven 180c gas 4
Method
Thaw the pastry and roll out to approx. 30cm x 20cm, place on a sheet of non stick paper on a baking tray. Fold in the edges about 2cm all around, to make a pastry case. Dry the potatoes well and place in a bowl with the garlic, season well, add a little olive and mix together, now tip the lot onto the pastry case and cover with the sliced cheese and a few sprigs of thyme. Place in the hot oven and bake for 45 minutes or until nicely browned and the potatoes are just soft. Slice and serve warm.
