Pressed chocolate cake

SET OVEN 180c GAS 4

LINE A 20CM CAKE TIN WITH NON STICK BAKING PAPER

200g dark chocolate, chopped

135g butter

4 eggs, separated

100g caster sugar

2 tablespoons cocoa powder

 

Melt the chocolate and butter on a low setting in the microwave. Set aside to cool slightly.

Whisk the egg yolks and sugar together till thick and creamy. Fold in the cocoa powder.

Add the chocolate mixture, then whisk the egg whites till stiff and gently fold into the mixture using a metal spoon. Pour the lot into the prepared tin and bake for 25 minutes. Remove from the oven and place a heavy plate on top to press down. Great served just warm with whipped cream.
