Ricotta avocado and lime dip

Perfect for piling on crusty bread while you are waiting for everything to ‘hot’ up on the barbecue also delicious as a topping on grilled fish or chicken.

Serves 4/6

250g ricotta

1 avocado

juice & rind of 1 lime

1 green chilli, chopped

handful coriander, finely chopped

generous sea salt

black pepper

Tip the tub of ricotta into a bowl, peel and mash the avocado, add to the ricotta with the lime juice and rind, stir in the chilli, coriander,

salt and black pepper, taste for seasoning, keep in the fridge until ready to serve. Just before serving add a trickle of olive oil.
