Stirfry beef with black bean sauce

Just about the best way to serve expensive steak, you will only need

half the amount, 220g steak combined with vegetables and a delicious

Chinese sauce is perfect for 2 servings.

220g sirloin steak, trimmed and thinly sliced

200g vegetables, thinly sliced

marinade

1 dessertspoon cornflour

1 tablespoon soy sauce

1 tablespoon oyster sauce

1 tablespoon black vinegar

sauce

1/2 tablespoon sunflower oil

2 cloves garlic, chopped

2 teaspoons fermented black beans, chopped

thumb size piece of ginger, chopped

1 red chilli, chopped

200ml chicken stock

To cook, mix all the marinade ingredients together, add the steak mix well, set aside while

you make the sauce. Heat the oil, add the garlic, black beans, ginger and chilli, sauté for a

minute or two, stir in the chicken stock and simmer while you cook the beef and vegetables. Heat another

tablespoon of oil in a wok or large pan, stir fry the beef and vegetables in batches, then add the

sauce to the wok, simmer again until you have a nice rich sauce, taste for seasoning and add more

stock if necessary. Serve with a drizzle of sesame oil, chopped coriander and basmati rice.
