Sweet and sour chicken

A nice bowl of sweet and sour chicken is perfect anytime.

Serves 4

4 chicken breasts, chopped

1 tablespoon sesame oil

1 tablespoon soy sauce

1 tablespoon cornflour

salt and black pepper

 Sauce

1/2  tablespoon sunflower oil

1 red onion, sliced

3/4 cloves garlic, chopped

thumb size piece of ginger, chopped

1 red chilli, chopped

1 red pepper, chopped

1 green pepper, chopped

1 tablespoon sugar

2 x 400ml tins of tomatoes, chopped

2 tablespoons rice vinegar

1 tablespoon white miso

Place the chicken in a large bowl, add the sesame oil, cornflour, soy sauce and seasoning,

mix well and set aside. Heat the oil in a large pan, sauté the onion, garlic, ginger, chilli,

peppers for a few minutes, stir in the sugar and cook until the sugar caramelises. Add the

tomatoes, rice vinegar, and miso, simmer for a few minutes. In another pan sauté the chopped

chicken, when it’s nicely browned, add to the sauce and continue to simmer until the chicken

is fully cooked, 75c. Taste for seasoning, add more soy/sugar if needed, serve with basmati rice.
