I think that this recipe is the best so far, crispy and chewy at the same time, only 4 ingredients and a dash of vanilla optional.
Makes 12
225g butter
100g soft brown sugar
200g golden syrup
300g oats
1 teaspoon vanilla extract
Set the oven 180c gas 4 Line a baking tin with non-stick paper 20cm x 30cm approx.
In a medium saucepan heat the butter until it melts, then keep the butter on the heat until it just turns golden brown, stay with it, there is a short time between golden brown and burnt! Stir in the sugar and syrup, mix well. Now tip the oats in to a large bowl, add the vanilla and stir in butter and syrup mixture. When all is well mixed, spoon onto the baking tin, making it as even as possible, place in hot oven for 20/25 until nicely golden. Cool in the tin, while it’s cooling mark into 12 slices. Store in an airtight container, they hold really well for several days.
