TOMATO AND ORANGE SALAD WITH SOY AND LIME DRESSING

This is such a nice combination, you can use any oranges but when the blood oranges are in season they look and taste especially good. You can also add some buffalo mozzarella or feta and make it more substantial.

Ingredients
Serves 4/20mins prep time/easy
400g cherry tomatoes, cut in half
2/3 oranges, depending on the size, cut into segments
2/3 scallions, finely sliced

Dressing
4 tablespoons olive oil
Thumb size piece ginger, peeled and thinly sliced
2 garlic cloves, peeled and sliced
2 tablespoons soy sauce
1 tablespsoon lime juice
1 tablespoon maple syrup

Method
For the dressing, heat the olive oil gently in  a pan with the ginger and garlic, you just want to flavour the oil, when the garlic and ginger are golden, drain off the oil in a bowl and reserve the garlic and ginger. Now add the soy, lime juice and maple syrup to the oil and mix well together. Taste for seasoning.

Mix the tomatoes, oranges and half the scallions together with the dressing, spoon on to a serving dish, garnish with the remaining scallions and reserved  garlic and ginger. Serve with lots of good bread to mop up the delicious juices.
