Traditional Fish Pie

The ultimate comfort food!

Serves 4

600g white fish, haddock or cod

100g smoked cod

500ml whole milk & 250ml cream

1 bay leaf, 1 onion, chopped

salt and black pepper

4 eggs, hard boiled, chopped

12 uncooked prawns

1 tablespoons capers

1 tablespoon, parsley, chopped

6 medium potatoes, peeled and chopped

100g butter

1 tablespoons chives, chopped

50g flour

50g parmesan, grated

Set oven 180c gas 4

Place the fish pieces in a saucepan with the milk, cream, bay leaf, onion and seasoning.

Simmer very gently for 4/5 minutes, then turn off the heat, tip into a colander and cool.

Retain the fish stock for the sauce. Remove the skin and any bones from the fish,

break into chunks and place in a baking dish. Add the hard-boiled eggs, capers,

prawns and parsley. Boil the potatoes and mash with half the butter, a little milk,

cream, seasoning and the chives. Melt the remaining butter, stir in the flour, cook for a minute.

or two, whisk in the fish stock, 500ml approx. Pour the sauce over the fish, top with

the mashed potatoes, sprinkle with the parmesan and bake in the hot oven for 45/50 minutes.
