Keep this recipe close, delicious to eat, only 5 ingredients and made in minutes, you can bake the lot together or I prefer to keep a roll of the mixture in the fridge and slice off 40g anytime a treat is required.
makes 18
Line a baking tray with non-stick paper, Set oven 180c gas 4
200g soft brown sugar
200g butter, room temperature
180g self raising flour
1 tablespoon cornflour
100g walnuts, toasted and chopped, Plus a few extra halves for the top of each biscuit
Mix the sugar and butter together until light and creamy, then stir in the other ingredients and mix well together. Chill for an hour before baking. Now you can take off about 40g per biscuit, about the size of a walnut, flatten slightly on the lined baking tray and place a walnut half on top, bake for 15 minutes, cool on the tin. If you want to bake later, divide the mixture in two, wrap into 2 long rolls in non-stick paper. Store in the fridge for a couple of weeks or freeze for up to 3 months.
