This is just about the best ‘pick me up dinner’ or self-care dinner, all the vitamins & minerals in one dish and the most delicious flavours. Keep the chilli and lime dressing at hand so good with so many dishes from Chargrill aubergines to stir fry chicken.

Serves 1

1x 150g sirloin steak, seasoned with sea salt, black pepper and a dash of balsamic vinegar, set aside in a cool place to marinate.


1 avocado, peeled and sliced

2/3 shallots, peeled and thinly sliced, mixed with a teaspoon of sugar and a dessertspoon of red wine vinegar

3/4 cherry tomatoes, sliced

handful of salad leaves

3/4 small new potatoes, sliced and saute in olive oil with a sprig of rosemary, slivers of garlic and seasoning

CHILLI AND LIME DRESSING Mix 1 tablespoon rice vinegar, 1 tablespoon sweet chilli sauce, 1 tablespoon soy, juice of 1 lime, 1 tablespoon sugar, 1 tablespoon coriander, chopped finely.

Chargrill the steak and cook to your liking, set aside for a few minutes to rest. Mix the avocado, shallots, cherry tomatoes and salad leaves together with a little olive oil and sea salt, spoon into the serving bowl, slice the steak thinly add to the bowl with the sauted potatoes and a little of the dressing, serve the remaining dressing on the side.
